{"id":959401728,"date":"2019-11-11T08:05:23","date_gmt":"2019-11-11T07:05:23","guid":{"rendered":"http:\/\/kakann.se\/2019\/november\/rabiff.html"},"modified":"2019-11-11T08:05:23","modified_gmt":"2019-11-11T07:05:23","slug":"2019_november_rabiff","status":"publish","type":"post","link":"https:\/\/kakann.se\/?p=959401728","title":{"rendered":"R\u00e5biff"},"content":{"rendered":"<div>\n<p><span>I l\u00f6rdags hade vi s\u00e5 sv\u00e5rt att best\u00e4mma oss vad vi skulle \u00e4ta till middag och velade fram och tillbaka.\u00a0<br \/> M var sugen att g\u00e5 till Hantverket och \u00e4ta men det \u00e4r s\u00e5 gott som om\u00f6jligt att f\u00e5 bord d\u00e4r en l\u00f6rdag och d\u00e5 kom vi att t\u00e4nka p\u00e5 Hantverkets r\u00e5biff och b\u00f6rjade sl\u00e5 i Stefan Ekengrens bok &#8221;H\u00f6gtid&#8221;, men den fanns inte d\u00e4r men v\u00e4l en annan variant: R\u00e5biff med l\u00f6jrom, r\u00f6dl\u00f6k och senapsmajonn\u00e4s.<br \/> Vi hade lite l\u00f6jrom i frysen s\u00e5 det var inte s\u00e5 mycket mer \u00e4n k\u00f6ttet och r\u00e5gbr\u00f6det som beh\u00f6vdes inhandlas. Det var en sjuk god kombination och senapsmajonn\u00e4sen blev s\u00e5 fantastisk god.<\/span><\/p>\n<p><span><br \/> Nu har vi kommit p\u00e5 grejen med att g\u00f6ra majonn\u00e4s och det funkar&#8230;. Varje g\u00e5ng!!<\/p>\n<p> L\u00e4gg ner alla ingredienser till majonn\u00e4sen i en h\u00f6g bunke, viktigt att de \u00e4r rumstempererade, anv\u00e4nd stavmixer, k\u00f6r i g\u00e5ng l\u00e4ngst ner med mixern utan att r\u00f6ra den upp\u00e5t, k\u00f6r n\u00e5gon minut och sen kan du b\u00f6rja dra stavmixern upp och ner tills du f\u00e5r den konsistens du vill ha.<\/span><\/p>\n<p><span>\u00a0<\/span><\/p>\n<p><span>Recept, 8 f\u00f6rr\u00e4tter:<\/span><\/p>\n<p><span>400 g kalv- eller oxinnanl\u00e5r, renputsat fr\u00e5n senor<\/span><\/p>\n<p><span>4 skivor r\u00e5gbr\u00f6d, t\u00e4rnat<\/span><\/p>\n<p><span>3 msk rapsolja<\/span><\/p>\n<p><span>200 g l\u00f6jrom<\/span><\/p>\n<p><span>2 dl senapsmajonn\u00e4s<\/span><\/p>\n<p><span>2 sm\u00e5 r\u00f6dl\u00f6kar, finskivade, anv\u00e4nd mandolin<\/span><\/p>\n<p><span>3 msk kapris (ska testa med friterad kapris n\u00e4sta g\u00e5ng)<\/span><\/p>\n<p><span>salt<\/span><\/p>\n<p><span>\u00a0<\/span><\/p>\n<p><span>S\u00e4tt ugnen p\u00e5 180 grader.\u00a0<\/span><\/p>\n<p><span>Mal k\u00f6ttet grovt (be dem g\u00f6ra det i aff\u00e4ren) eller t\u00e4rna det fint med kniv. V\u00e4nd runt br\u00f6det i oljan och rosta p\u00e5 en pl\u00e5t i ugnen i ca 10 minuter tills det \u00e4r krispigt. L\u00e5t kallna.<\/span><\/p>\n<p><span>L\u00e4gg k\u00f6ttet p\u00e5 ett fat och salta l\u00e4tt p\u00e5 ytan. Spritsa toppar av l\u00f6jrom och majonn\u00e4s p\u00e5 k\u00f6ttet.
