V\u00e4nd sedan och stek den andra sidan l\u00e4tt gyllene.<\/p>\n<p>L\u00e4gg ankbr\u00f6sten i en ugnsform och stek dem klart i ugnen med fettkappan upp\u00e5t. Mitt i ugnen p\u00e5 ca 150 grader tills br\u00f6stet har n\u00e5tt en innertemperatur p\u00e5 52 grader, ca 8 min.<\/p>\n<p>Sl\u00e5 in ankbr\u00f6sten i sm\u00f6rpapper eller bakpl\u00e5tspapper (ej folie d\u00e5 blir den torr). L\u00e5t dem vila p\u00e5 en sk\u00e4rbr\u00e4da i 5 min innan du sk\u00e4r dem i tunna skivor.<\/p>\n<p>\u00a0<\/p>\n<p>BL\u00c5B\u00c4RSS\u00c5S<\/p>\n<p>Skala och finhacka l\u00f6ken.<\/p>\n<p>Sm\u00e4lt sockret i en kastrull. Blanda ner l\u00f6k, bl\u00e5b\u00e4r och timjan L\u00e5t det fr\u00e4sa ca 1 minut.<\/p>\n<p>Tills\u00e4tt vin, vatten och fond och l\u00e5t det sjuda ca 10 min.<\/p>\n<p>Sila s\u00e5sen genom en finmaskig sil och pressa med en sked f\u00f6r att f\u00e5 ut v\u00e4tskan.<\/p>\n<p>V\u00e4rm den silade s\u00e5sen och vispa ner sm\u00f6r och maizena utr\u00f6rd i kallt vatten.<\/p>\n<p>L\u00e5t koka upp.<\/p>\n<p>\u00a0<\/p>\n<p>ROTSELLERI- &amp; CHAMPINJONPUR\u00c9<\/p>\n<p>Skala och sk\u00e4r rotsellerin i t\u00e4rningar. Ansa och dela champinjonerna.<\/p>\n<p>Koka rotsellerin under lock p\u00e5 svag v\u00e4rme tills den \u00e4r helt mjuk, ca 15 minuter. L\u00e4gg ned champinjonerna med rotsellerin och l\u00e5t dem f\u00e5 koka i ca 5 min.<\/p>\n<p>Lyft upp selleri och svamp och l\u00e4gg i en mixer. Tills\u00e4tt gr\u00e4dden och mixa blandningen till en sl\u00e4t pur\u00e9.<\/p>\n<p>Smaka av med citronjuice, salt och peppar.
