Plocka hummern p\u00e5 allt k\u00f6tt och spara till senare. Krossa skalet i lite mindre delar och rosta det i en st\u00f6rre stekpanna tillsammans med sm\u00f6r och olivolja i cirka 5 minuter.<br \/>Addera hackad schalottenl\u00f6k och f\u00e4nk\u00e5l och l\u00e5t svettas i n\u00e5gra minuter. Addera tomatpur\u00e9 och r\u00f6r om och l\u00e5t steka i ytterligare n\u00e5gra minuter. H\u00e4ll i vitt vin och vatten (50\/50). L\u00e5t reducera tills du f\u00e5tt en stark och smakrik fond.<\/p>\n<p>2. Addera hackad schalottenl\u00f6k, vitl\u00f6k och selleri i en stekpanna och l\u00e5t ingredienserna svettas f\u00f6rsiktigt i sm\u00f6r och olja. Addera hummerfonden och l\u00e5t allt b\u00f6rja koka. H\u00e4ll i vispgr\u00e4dde och reducera ner till en \u00f6nskv\u00e4rd konsistens. Krydda med salt och en nypa cayennepeppar f\u00f6r att f\u00e5 lite hetta om du vill.<\/p>\n<p>Innan servering hackar du hummerk\u00f6ttet och gr\u00e4sl\u00f6ken. Addera k\u00f6ttet och gr\u00e4sl\u00f6ken till s\u00e5sen innan du adderar pastan och blanda runt ordentligt.
