Ska testa att g\u00f6ra en vegetarisk variant med vegof\u00e4rs fram\u00f6ver.<br \/>\u00c5terkommer med hur resultatet blir.<\/div>\n<div>\u00a0<\/div>\n<div>Det h\u00e4r receptet \u00e4r fr\u00e5n en av mina favoritkockar, en doldis, Stefan Ekengren. Han driver restaurang Hantverket. Sagolik mat d\u00e4r, ett av de f\u00e5 st\u00e4llen man kan blunda och best\u00e4lla fr\u00e5n menyn och allt \u00e4r gott och servicen \u00e4r tipptopp.\u00a0<\/p>\n<div class=\"separator\">\u00a0<\/div>\n<\/div>\n<div>\u00a0<\/div>\n<div>\n<div>4 portioner<\/div>\n<div>480 g blandf\u00e4rs<br \/>1\/2 dl gr\u00f6tris<br \/>2 dl standardmj\u00f6lk till riset<br \/>1 gul l\u00f6k, finhackad<br \/>40 g sm\u00f6r till l\u00f6ken<br \/>2 1\/2 dl standardmj\u00f6lk till f\u00e4rsen, kylsk\u00e5pskall <br \/>1 \u00e4gg<br \/>1\/2 dl ljus sirap till f\u00e4rsen<br \/>2 1\/2 liter strimlad vitk\u00e5l<br \/>30 g sm\u00f6r till k\u00e5len<br \/>1\/2 dl ljus sirap till k\u00e5len<br \/>3 dl kalvbuljong<br \/>3\/4 dl vispgr\u00e4dde<br \/>1\/2 citron, saft<\/div>\n<div>Salt och nymald svartpeppar<\/div>\n<div>\u00a0<\/div>\n<div>St\u00e4ll en bunke i frysen. Koka riset klibbigt med mj\u00f6lken, l\u00e5t kallna. Koka l\u00f6ken mjuk i sm\u00f6ret och l\u00e5t kallna. L\u00e4gg f\u00e4rsen i den frysta bunken och tills\u00e4tt salt, peppar och mj\u00f6lk. R\u00f6r tills f\u00e4rsen g\u00e5r ihop. Tills\u00e4tt ris, l\u00f6k, \u00e4gg och sirap. Blanda v\u00e4l och g\u00f6r ett stekprov. Krydda eventuellt medmer sirap, salt och peppar. St\u00e4ll \u00e5t sidan.<\/div>\n<div>Stek k\u00e5len i sm\u00f6r och sirap cirka 10 minuter tills k\u00e5len f\u00e5tt lite f\u00e4rg och \u00e4r glansig. Smaka av med salt och l\u00e5t svalna. Bottna\u00a0 en ugnsform med h\u00e4lften av k\u00e5len. Bred ut f\u00e4rsen \u00f6ver k\u00e5len och avsluta nedrestes av k\u00e5len.<\/div>\n<div>V\u00e4rm buljongen och skeda den \u00f6ver och runt k\u00e5lpuddingen.<\/div>\n<div>Gr\u00e4dda mitt i ugnen p\u00e5 175 grader cirka 45 minuter. H\u00e4ll buljongen som bildats runt puddingen i en kastrull. Koka ner den n\u00e5got och tills\u00e4tt gr\u00e4dden.<\/div>\n<div>Smaka eventuellt av med citron, salt och ytterligare sirap.
