{"id":1484383744,"date":"2016-07-14T21:02:00","date_gmt":"2016-07-14T19:02:00","guid":{"rendered":"http:\/\/kakann.se\/2016\/july\/kyckling-med-smak-av-kokos.html"},"modified":"2016-07-14T21:02:00","modified_gmt":"2016-07-14T19:02:00","slug":"2016_july_kyckling-med-smak-av-kokos","status":"publish","type":"post","link":"https:\/\/kakann.se\/?p=1484383744","title":{"rendered":"Kyckling med smak av kokos"},"content":{"rendered":"<div>Ikv\u00e4ll blev det en r\u00e4tt ur Leila Lindholms bok &#8221;Fresh foodie&#8221;, en receptbok som jag kan varmt rekommendera, lite annorlunda recept men fr\u00e4scha och l\u00e4ttlagade.<\/p>\n<p>Den h\u00e4r r\u00e4tten serveras kall och passar j\u00e4ttebra en varm sommardag:<\/p>\n<p>Coconut Chicken<\/p><\/div>\n<div>\u00a0<\/div>\n<div>4 kycklingfil\u00e9er<\/div>\n<div>500 ml kokosgr\u00e4dde<\/div>\n<div>1 tsk salt<\/div>\n<div>saften av \u00bd lime<\/div>\n<div>1 msk fisks\u00e5s<\/div>\n<div>2 f\u00e4rska limeblad (jag hade bara torkade men det gick alldeles utm\u00e4rkt, torkade finns i hyllan bland asiatiska tillbeh\u00f6r)<\/div>\n<div>\u00a0<\/div>\n<div>Sallad:<\/div>\n<div>2 krispiga (h\u00e5rda p\u00e4ron)<\/div>\n<div>3 dl vitk\u00e5l<\/div>\n<div>3 dl r\u00f6dk\u00e5l<\/div>\n<div>2 mor\u00f6tter<\/div>\n<div>\u00a0<\/div>\n<div>Dressing:<\/div>\n<div>2 msk fisks\u00e5s<\/div>\n<div>1\u00bd msk socker<\/div>\n<div>saft av 3 limefrukter<\/div>\n<div>\u00a0<\/div>\n<div>Sallad, avocado, limefrukt, koriander och salta jordn\u00f6tter till servering<\/div>\n<div>\u00a0<\/div>\n<div>1. H\u00e4ll kokosmj\u00f6lken och smaks\u00e4ttare i en kastrull<\/div>\n<div>2. L\u00e4gg i kycklingen i kastrullen och l\u00e5t sjuda p\u00e5 medelv\u00e4rme i ca 20 minuter<\/div>\n<div>3. St\u00e4ng av och l\u00e5t kycklingen ligga kvar i kastrullen och &#8221;vila&#8221; i 10 minuter till<\/div>\n<div>4. Ta upp kycklingen och l\u00e5t svalna n\u00e5got. Dra sedan is\u00e4r k\u00f6ttet i tr\u00e5diga bitar<\/div>\n<div>5. L\u00e5t kokosmj\u00f6lken koka ner\u00a0s\u00e5 den tjocknar i\u00a0 ca 15 minuter. L\u00e5t svalna och blanda sedan med kycklingen.<\/div>\n<div>6. Strimla p\u00e4ron, r\u00f6dkpl, vitk\u00e5l och morot tunt och blanda.<\/div>\n<div>7, Blanda samma fisks\u00e5s, socker och limesaft. Blanda dressingen med salladen precis innan serveringen s\u00e5 att gr\u00f6nsakerna beh\u00e5ller sin krispighet.<\/div>\n<div>8.
